An Irish Welcome
Here’s Céad Míle Fáilte to friend and to rover
That’s a greeting that’s Irish as Irish can be
It means you are welcome
A thousand times over
Wherever you come from, Whosoever you be
Irish Stew
“Ballymaloe”
2 pounds Lamb, boneless; cubed, browned & drained
slat & pepper to taste
2 cups water
1 bay leaf
2 medium carrots; peeled & sliced
1 onions, thinly sliced
4 medium potatoes, peeled & quartered
1/4 cup quick-cooking tapioca, optional
10 ounces frozen peas
Season cubed lamb with salt and pepper.
Add remaining ingredients except peas to a pot.
Stir well.
Cover and cook over low heat 4-5 hours.
Add peas during last 1-2 hours of cooking.
